Chef Debo. Food for Champions Series

September is almost over guys. Can you believe it? Feels just like yesterday that I told my siblings happy birthday.
Yes oooh! Three of my siblings are September babies.
My first sister, Jennifer (6th),

my immediate younger brother, Joshua (12th), my immediate senior sister(15th)

Happy birthday babies. I love you all!!!!!!
Anyway, so recently I have bn thinking about my future husband and eight kids; about how they'll be really angry with me if I continue in my non-cooking ways.
In other to avoid my babies begging their friend's mummies to cook or bake their special meals for them...
I started researching, reading, experimenting etc, and viola! Now I am thinking of writing a cook book.
I started with baking... I used to love baking cakes in the past, but to be honest with you last time I baked a cake before this month was maybe three years ago when we used to bake cakes every Sunday morning for church.
Tips: While researching on cake baking, I have found out that technically your major ingredients should all weigh the same thing. The right composition of flour and sugar will determine the structure of the cake.
The right composition of eggs and butter will determine the moisture of the cake.
Weight of flour = weight of Sugar
Weight of eggs = Weight of Butter.
Note. Your ingredients should be at room temperature. It is safer to weigh your items rather than use cup measurement.
Weight of eggs + liquid ingredients (milk, liquid flavour) = weight of flour.
So you see proportionately and in -proportionately :D your ingredients are weighing about the same. However sometimes, sugar weighs more than flour . (Depending on how sweet you want the cake to be).
Anyway, that is all I've learnt about cakes so far...
Oh, eggs and butter (depends) can be substituted by apple sauce, banana puree, vegetable or olive oil.... Amongst other ingredients.
Erm.... What else? Yeah... Thats about it.... My cakes havent bn GREEAT! But I made the most tasting one yesterday. The outside looks a bit discouraging, but the inside is heavenly.

Unlike normal Debo that hardly cooks, I have actually bn trying some good Debo made meals; poundo yam and ogbono soup,

lettuce sauce and rice,

spaghetti and  sausage sauce,
egg sauce and coffee (breakfast).

In other non related news; my salon is going great,
I am preparing for the next edition of volunteer Nigeria which is in November...

Work is going well... I am very grateful to God Almighty.
Recently, I heard a ministration that said "If one is not baptised by water, they cannot enter the Kingdom of God". I am going to do a special post on that... But feel free to send in a message about the statement.
Have a great week guys. And a wonderful October...
Xoxo
